We were having some friends over for the holiday for some fun, food and swimming. Since they were going to be over for lunch and dinner, I put this Fiesta Crock Pot Roast on late the night before and it was ready for us to devour at lunch! Everyone, from the adults to the kiddos, absolutely loved this yummy roast. Together we came up with all kinds of ways that this would be delicious like…on tortillas, nachos, taco salad, rice or buns. All of those ideas were thought of in about a minute, amidst a whole lot of "Oh my! This is so good!". I hope you enjoy it as much we all do!

How to Make Fiesta Roast in a Crock Pot

Place your roast in a 6-quart crock pot. Add in your remaining ingredients. Cover and cook on low for 10-12 hours. Shred with two forks and serve whatever way suits your fancy. Told ya it was easy! 😉

  • 2.5 lb beef roast
  • 20 oz tomatoes with chiles (2 - 10 oz cans)
  • 1 oz pkg taco seasoning
  • Place your roast in a 6-quart crock pot.

  • Add in your remaining ingredients.

  • Cover and cook on low for 10-12 hours.
